Crispy Chicken Wings Recheado


CRISPY CHICKEN WINGS RECHEADO

A twist in Goan cuisine. Traditional Goan Recheado masala is very flavourful and the masala is used in making many authentic Goan dishes for example: Stuffed Mackerel Recheado, Kingfish recheado, Stuffed Squids with recheado masala. But today i  wanted to try something different, so i just combined Chinese and Goan Cuisine together and it just worked out perfect. 



Ingredients:
½ Kg Chicken Wings
Salt
Pepper
1 teaspoon Coconut Vinegar
1 finely chopped Tomato

For Recheado Masala
10 Dried Red Chilies
4 Cloves of Garlic
½ Ginger
½ Teaspoon Cumin seeds
½ Teaspoon Mustard seeds
6 Peppercorns
4 Cloves
½ Cinnamon stick
3 Cardamoms
½ Roasted Onion
90ml Coconut Vinegar
½ Teaspoon Turmeric Powder
½ Teaspoon Sugar
Water
Salt

For Batter
1 Egg
1 Cup Corn Flour
½ Cup Rice Flour
Salt
Oil to fry


Method:
-          Clean and wash the chicken wings [can also cut the wings into half]. Marinate with salt, pepper, vinegar and keep aside.
-          Roast half onion on the range. [Direct flame].

                                                                      

-          Blend the recheado ingredients together along with the roasted onion, make a thick paste.


-          In a bowl make a thick batter using corn flour, rice four, egg and salt. [Add water if required].



-          In a pan add 60ml oil. Add the chopped tomato and sauté till the tomato is soft. Add the recheado masala in the pan and cook for 4 minutes.

-          Add ½ cup water and cook the masala till it thickens. Check for salt.

-          Heat oil in a fryer. Coat the chicken in the batter and dip it into the hot oil. Fry till golden brown and crisp.

-           Add the fried chicken in the recheado masala and mix well. 


-          Serve hot with a glass of beer.
