Pork Ribs Goan Style
Ingredients:
8 Pork Ribs
20 grams Pork fat
Salt to taste
15ml Coconut Vinegar
½ Teaspoon Black
Pepper powder
½ Mug Water
1 Chopped Onion
1 Chopped Tomato
For Masala:
10 Dried Red Chilies
1 teaspoon Cumin
seeds
½ teaspoon Turmeric
powder
4 Cloves of Garlic
½ Ginger
1 Dried Bayleaf
10 Black Peppercorns
6 Cloves
½ Cinnamon stick
A pinch of Sugar
½ teaspoon Coriander
seeds
60 ml Coconut Vinegar
30 ml water
Method:

Clean and wash the pork ribs. Marinate the pork
with salt, black pepper powder and coconut vinegar. Keep aside for an hour.

For the masala
-
Grind all the ingredients into a fine paste by
using coconut vinegar and a little water.
Heat a sauce pan. Cut the pork fat into cubes
and add in the pan. Once the oil is released from the fat discard the fat.

Add chopped onion in the pan and cook till
translucent.

Add the tomatoes and cook for 2 minutes on
medium heat.

Pour in the ground masala in the sauce pan and
cook for 3 minutes.

Add the pork ribs and mix well.

Add water in the sauce pan and mix. Check for
salt.

Cover the sauce pan with a lid. Cook the pork on
low heat for 45 minutes.

Serve hot with rice or bread.
