Pork Ribs Goan Style




Ingredients:
8 Pork Ribs
20 grams Pork fat
Salt to taste
15ml Coconut Vinegar
½ Teaspoon Black Pepper powder
½ Mug Water
1 Chopped Onion
1 Chopped Tomato
For Masala:
10 Dried Red Chilies
1 teaspoon Cumin seeds
½ teaspoon Turmeric powder
4 Cloves of Garlic
½ Ginger
1 Dried Bayleaf
10 Black Peppercorns
6 Cloves
½ Cinnamon stick
A pinch of Sugar
½ teaspoon Coriander seeds
60 ml Coconut Vinegar
30 ml water


Method:
-          Clean and wash the pork ribs. Marinate the pork with salt, black pepper powder and coconut vinegar. Keep aside for an hour.

-          For the masala

-          Grind all the ingredients into a fine paste by using coconut vinegar and a little water.


   Heat a sauce pan. Cut the pork fat into cubes and add in the pan. Once the oil is released from the fat discard the fat.




-          Add chopped onion in the pan and cook till translucent.
-          Add the tomatoes and cook for 2 minutes on medium heat.
-          Pour in the ground masala in the sauce pan and cook for 3 minutes.
-          Add the pork ribs and mix well.

-          Add water in the sauce pan and mix. Check for salt.

-          Cover the sauce pan with a lid. Cook the pork on low heat for 45 minutes.
-          Serve hot with rice or bread.
