PEARL SPOT FISH FRIED IN GREEN MASALA

PEARL SPOT FISH FRED IN GREEN MASALA Ingredients: 2 Pearl Spot Fish (Kalundar;- Goan Name) Salt to taste Oil For Masala Hand full of Coriander Leaves 8 Mint Leaves 1 Lime 5 Green Chilies 6 Peppercorns 5 Cloves Small piece of Cinnamon Stick ½ Chopped Onion ½ teaspoon Fennel Seeds ½ teaspoon Cumin Seeds Small piece Ginger 3 cloves of Garlic ½ teaspoon Fenugreek Seeds ½ teaspoon Mustard Seeds Method: -           Clean and slit the pearl fish .   -           Marinate the fish with salt and lime juice. -           For Masala grind the above ingredients to a thick paste by using little water.   -           Apply the masala paste to the fish and marinate for half hour. -           Fry the fish on low flame. Serve with sliced onion rings and a slice of lime.

Beer Batter Fried Calamari

BEER BATTER FRIED CALAMARI Ingredients: 4 Large Calamari 2 tablespoon Refined Flour 1 tablespoon Rice Flour 1 Egg 60ml Beer Salt To taste Black Pepper Powder for Seasoning Ginger Garlic Paste Oil to Deep Fry Method: -           Clean the Calamari and cut into rings.   -           Marinate with salt, black pepper and ginger garlic paste. For batter. -           Mix refined flour, rice flour, black pepper powder, salt, egg and beer to make a thick batter.     -           Heat oil in a frying pan. -           Mix the calamari in the batter and fry till golden brown on high flame. -           Serve hot.

Aloo Dhaniya Tikki

ALOO DHANIYA TIKKI Ingredients: 3 Boiled Potatoes 1 teaspoon Cornflour Oil to fry 1 cup fresh Coriander Leaves [Dhaniya] 1 teaspoon Cumin seeds ½ teaspoon Turmeric powder 3 Green Chilies 3 Cloves of Garlic ½ Ginger 3 pieces of Tamarind 120ml Water A Pinch of Sugar A Pinch of salt Method: -           In a blender add coriander leaves, ginger, garlic, tamarind, turmeric powder, cumin seeds, green chilies, sugar, salt and water. Grind all the ingredients to a fine paste. -           Mash the boiled potatoes, add the ground coriander mixture and add corn flour and mix. Check for salt. -           Make small patties [shaped like tikki]. -           Heat oil in a pan and shallow fry till brown in colour. -           Serve hot .

GOAN PORK SAUSAGE CHILLY FRY 'Goan Pork Sausage' when you speak these 3 words in front of a Goan you will see their mouth watering. Goan pork sausages are spicy, sour, smoky and very delicious. Goan sausages are boiled or fried and had with Goan Pao. In the evening across the streets of small villages like Navelim, Agassiam, Santa Cruz and many more places you will find the sausage makers selling Goan Sausage Pao. Goans are never tired of eating sausages.  Today I have prepared Goan Sausage Chilly Fry which is mainly prepared in the house of pork sausage lover. In my reciepe I have fried the sausage first, as the sausage contains fat and when cooked starts releasing oil which is very flavorful and I have used the sausage oil to cook my dish.  Ingredients: 15 pieces of Pork Sausage 1 Onion 1 Tomato ½ Green Capsicum 2 Green chilies 1 teaspoon Ginger Garlic paste ½ teaspoon Turmeric powder ½ teaspoon Red chili powder 1 teaspoon Oil 6 flakes

Crispy Corn Kernels

CRISPY CORN KERNELS Ingredients: 200gms Corn Kernels 1 ½  tablespoon Corn Flour 1 teaspoon Black Pepper Powder Salt to Taste 3 Cup Water  Oil to Fry Chaat Masala [Optional] 2 Green Chilies Method: -           Heat water in a sauce pan. Add corn kernels once the water starts to boil and cook for 4 minutes. -           Drain the water and let the corn cool. -           Heat oil in a hollow pan. -           Add corn flour and pepper powder to the corn kernels and mix. -           Put the corn in the oil and fry till crispy. Cover the pan with a lid while frying. -           Serve hot with chopped green chilies, chaat masala [optional] and lime wedge.

CHICKEN PAKORA BITES Ingredients: 250gms Boneless Chicken Salt to Marinate Lime juice Oil to fry For Batter 2 tablespoon Besan Flour [Gram Flour] 1 tablespoon Corn Flour 1 Egg White ½ teaspoon Black Pepper Powder 2 teaspoon Red Chili Powder ½ teaspoon Cumin Powder ½ teaspoon Garam Masala Powder ½ teaspoon Coriander Powder 3 Curry Leaves 1 Green Chili Salt A pinch of Red Food colour [optional] 1 teaspoon Ginger Garlic paste Water For Tadka 2 Dried Red Chilies 1 teaspoon Mustard Seeds 8 Curry Leaves A Pinch of Hing Oil Method: -           Wash the chicken and cut it into small cubes. Marinate the chicken with salt and lime juice.          -           For batter -           Chop the curry leaves and green chilies finely. -           In a bowl add besan, corn flour, red chili powder, garam masala powder, cumin powder, coriander powder, ginger garlic paste, black pepper powder, salt, red food colour, egg

Dried Prawns Chilly Fry With Potatoes.

DRIED PRAWNS CHILLY FRY WITH POTATOES Ingredients: ½ Bowl Dry Prawns 2 boiled Potatoes 2 Onions 1 Tomato 4 Green Chilies 6 Curry Leaves 1 Teaspoon Ginger & Garlic Paste 1 teaspoon Cumin seeds ½ teaspoon Turmeric powder 1teaspoon Red Chili powder ½ teaspoon Coriander powder Salt to taste Oil 60ml water Method: -           Clean the dry prawns by separating the head.   Soak the prawns in water for 3 minutes. Drain the water.   Keep aside. -           Roughly chop onions, tomato and green chilies. Skin the boiled potatoes and cut into cubes. -           Heat oil in a pan, add cumin seeds and let it crackle. Add curry leaves. -           Add onions and cook till the onion is translucent. Add ginger garlic paste and green chilies and sauté it for a minute on medium heat. -           Add tomato and cook it till the tomato gets soft. Add turmeric powder, red chili powder and coriander powder and mix. Cook for another
