GOAN PORK SAUSAGE CHILLY FRY



'Goan Pork Sausage' when you speak these 3 words in front of a Goan you will see their mouth watering. Goan pork sausages are spicy, sour, smoky and very delicious. Goan sausages are boiled or fried and had with Goan Pao. In the evening across the streets of small villages like Navelim, Agassiam, Santa Cruz and many more places you will find the sausage makers selling Goan Sausage Pao. Goans are never tired of eating sausages. 
Today I have prepared Goan Sausage Chilly Fry which is mainly prepared in the house of pork sausage lover. In my reciepe I have fried the sausage first, as the sausage contains fat and when cooked starts releasing oil which is very flavorful and I have used the sausage oil to cook my dish. 

Ingredients:
15 pieces of Pork Sausage
1 Onion
1 Tomato
½ Green Capsicum
2 Green chilies
1 teaspoon Ginger Garlic paste
½ teaspoon Turmeric powder
½ teaspoon Red chili powder
1 teaspoon Oil
6 flakes of Kokum
Coriander leaves for garnish

Method:

-          Finely slice the onion, tomato and capsicum.

-          In a pan add oil and fry the sausages till the sausage starts to release its oil. Remove the sausages and keep aside.

-          Add onion in the sausage oil and sauté till the onion is translucent.
-          Add tomato and capsicum and sauté for 2 minutes on medium heat. Add the ginger garlic paste, chopped green chilies, turmeric powder and red chili powder, sauté for a minute and add kokum and mix.

-          Add the fried pork sausages and mix. Cook for 2 minutes on low heat.
-          Serve hot garnished with coriander leaves.
