Recheado Fried Mackerel Fillet

RECHEADO FRIED MACKEREL FILLET


Ingredients:
1 Mackerels
Salt to marinate
Oil to fry
For Masala
10 dried red chilies
5 cloves of Garlic
½ Ginger
½ teaspoon Cumin seeds
½ teaspoon Mustard seeds
8 Black peppercorns
8 cloves
½ Cinnamon stick
4 Cardamom’s
½ teaspoon sugar
½ teaspoon Turmeric powder
90ml Coconut vinegar
1 teaspoon Tomato ketchup[optional]
A pinch Of Sugar

Method:

-          Wash the Mackerel. With the help of a sharp knife make 2 fillets of the mackerel. Apply salt and keep aside.

-          For Recheado Masala:
-          Grind all the ingredients to a fine thick paste by using coconut vinegar.


-          Marinate the fillet with masala and keep aside for an hour. The remaining masala can be stored in a air tight container and kept in the freezer. 

-          Heat oil in a frying pan. Place the mackerel skin side down in the pan and cook for 3 minutes on low heat, flip the fillet and cook for 2 minutes. Serve hot.
