Pork Ribs Goan Style Ingredients: 8 Pork Ribs 20 grams Pork fat Salt to taste 15ml Coconut Vinegar ½ Teaspoon Black Pepper powder ½ Mug Water 1 Chopped Onion 1 Chopped Tomato For Masala: 10 Dried Red Chilies 1 teaspoon Cumin seeds ½ teaspoon Turmeric powder 4 Cloves of Garlic ½ Ginger 1 Dried Bayleaf 10 Black Peppercorns 6 Cloves ½ Cinnamon stick A pinch of Sugar ½ teaspoon Coriander seeds 60 ml Coconut Vinegar 30 ml water Method: -           Clean and wash the pork ribs. Marinate the pork with salt, black pepper powder and coconut vinegar. Keep aside for an hour. -           For the masala -           Grind all the ingredients into a fine paste by using coconut vinegar and a little water.     Heat a sauce pan. Cut the pork fat into cubes and add in the pan. Once the oil is released from the fat discard the fat. -           Add chopped onion in the pan and cook till translucent. -

BREAD ROLL UPMA Ingredients: 6 Bread Rolls 1 Chopped Onion 1 Chopped Tomato 2 Chopped Green chilies 1 Chopped Clove of Garlic 6 Curry Leaves 1 teaspoon Cumin seeds 1 teaspoon Mustard seeds ½ teaspoon Turmeric Powder 1 teaspoon Red Chili Powder A pinch of Sugar Salt to taste Oil to cook Method: -           Cut the bread rolls into cubes.   Heat a pan and toast the bread till the edges are light golden brown. Keep aside -           Heat oil in a pan. Add mustard seeds and cumin seeds and let it crackle. -           Add chopped onions and cook till the onions are translucent. -           Add garlic, green chilies and curry leaves and sauté for a minute. -           Add tomatoes and sauté for a minute. Add turmeric powder and red chili powder, sugar and mix. -           Cook till the tomatoes are soft and the mixture is dry. Check for salt. -           Add the toasted bread and mix well. Serve hot.
